Easy Steak Fajita Wraps On The Go -with Cilantro Lime Kale Chips

   I'm always way too busy in the mornings to think about making lunch from scratch. I usually end up buying it from one of the local delis. Most of the time I can find something that's pretty healthy but usually my choices are limited to the same thing.  My lunch basically consists of some variation of salad and chicken. Not bad but, I found something a lot better.
  I just tried this new product by STOUFFER'S® FIT KITCHEN. It's actually sold as a frozen entree but I turned it up a notch and made it into this awesome wrap. It's so convenient. All you need is a package of fajita wraps and a microwave. You can have the absolute best sizzling hot steak fajita lunch outside of a bar and grill. And, who wouldn't want steak for lunch!? Oh, and did I mention it takes less than 10 minutes to make. I found my Fit Kitchen meal at Walmart in the 'convenience foods' section of the frozen entrees isle. Keep reading and I'll show you how to make these fajitas as well as a these incredibly easy (and delicious) kale chips....



  To go along with these steak fajitas I wanted to share a great recipe. Well, it's actually less of a recipe and more of a - turning on the oven and throwing in Kale on a cookie sheet - type of thing. But for the sake of this post, we'll call it a recipe. You can print out and follow along to see how I make my fajitas. The way I wrap them is more of a burrito style, but that's just how I roll (pun not intended!)
So let's get started.

Cilantro Lime Kale Chips

Recipe by: D.Ludington
Prep Time: 15 minutes
Cook Time 10 minutes
 
Ingredients:
     1 bunch Kale, stems removed
     1 medium Lime, zested
     2 Tbsp  Coarsely chopped cilantro
     1 Tbsp  olive oil or canola oil
     2 tsp  Sea salt
     1 tsp  Freshly ground pepper

Instructions:
  1.  Preheat oven to 325° F
  2. Tear kale into large pieces removing any tough stems. 
  3. Lightly drizzle oil over kale or use an oil sprayer until lightly coated. Season with salt and pepper tossing kale throughout. 
  4. Bake until crisp, about 10-15 minutes. Carefully watch cooking time and temp. to avoid burning. 
  5. Remove from oven and season with lime zest and cilantro. Serve immediately.

  The best tool for zesting is a microplane. If you don't have a microplane a box grater or hand held cheese grater works just as well.  Just use light pressure to avoid cutting past the outer rind and into the bitter (lighter colored) pith.


Toss with salt pepper and oil.


TO MAKE THE FAJITA WRAP:
Place the microwaved Fit Kitchen fajita steak and rice mix on the wrap horizontally across the center.


Next, fold the bottom half over the top of filling.


Now, fold the right end over the top.


Next, fold the left end over the top.


Finally, fold the entire wrap upward rolling it.


Now, fold it up one more time keeping the open end underneath the fajita to hold it closed.



That's all there is too it. 
An easy, convenient and high protein lunch
on the go!
