Peperoncini Mashed Potatoes

  There’s nothing better than being able to celebrate the holidays with family and friends. It’s a time to get together, share memories and enjoy some great home cooked meals. One of my favorite parts of the holidays is the time spend around the table. You just can’t beat great food and great conversation with the people you love.

  I want to share with you a great holiday recipe a friend of mine has been making for years. I decided to kick it up a notch adding a unique twist in this classic holiday dish. Peperoncini Mashed Potatoes                Recipe: Dave Clements Serves: 12-16 people Prep Time: 20 mins. Cook Time: 20 mins. INGREDIENTS      5lbs. Yukon Gold Potatoes (peeled and quartered)      2C. Heavy Cream      1C. Imported Greek Peperoncini      1 Stick Unsalted Butter      1/4C Kosher Salt      3 Bay Leaves      Freshly Ground Black Pepper  INSTRUCTIONS Place peeled and quartered potatoes in enough cold water to completely cover.  Add 3 Bay leaves and 1/4 cup salt to water; bring to a boil over high heat. Cook until fork tender, about 20 minutes. While potatoes are cooking, heat 1 stick unsalted butter and heavy cream over low heat.  Finely chop peperoncini and set aside. Drain potatoes after cooking. Using potato ricer, press potatoes into large  bowl. Add peperoncini and cream mixture; stir and blend well. Salt and pepper to taste. Serve immediately or hold warm* *To hold warm, place potatoes covered in a metal bowl over a lightly simmering  pot. The steam will keep the potatoes warm while not scorching the bottom.
