I love being able to create fun and delicious recipes using unconventional ingredients. I often find that combining simple flavors from ordinary items you have around the house ends up being unexpectedly delicious. It's also fun being able to experiment with combinations of foods that might seem out of the ordinary but work really well together. In a recipe I created last year I combined the sweet and savory flavors of Parmigiano Reggiano and chocolate in a grilled cheese sandwich. You wouldn't believe how well the flavors blended together!
For today's post, I wanted to create a light and refreshing vinaigrette that would work great for both fish and chicken when served with a salad as the main course. A while back, I remember seeing a great recipe using Coca-Cola™ as one of its main ingredients in a balsamic salad dressing. It actually looked really delicious! I thought, why not try the same with its lemon-lime counter part, Sprite®. And so I did. This basic combination of flavors using these simple ingredients created a super salad dressing that is not only easy to make but really delicious. To start out we're going to make a simple reduction using Sprite. Making a reduction is super easy. You just simmer until reduced. The amount you reduce it by depends on the liquid and the final result you want to achieve. In this case, you want to end up with approximately 1/3 of the liquid you began with. Once it cools it will thicken to a corn syrup like consistency.
Use freshly grated ginger or ground ginger. If using ground ginger use approximately 1/4 of the full amount.

I think this dressing is great on a salad with salmon, tuna or chicken. I even use it as a marinade. Just seal the chicken or fish in a zip lock bag with 1/2 C of the dressing
